Purification of Wheat Alpha-Amylase

Abstract

Partial purification of wheat alpha-amylase using a gel filtration method is described. Specific activities of such purified fractions from a series of wheat samples were found to be linearly related to the alpha-amylase values obtained using the ground unfractionated wheat. On this evidence it is suggested that variations in wheat alpha-amylase values arise from differences in the activity rather than in the quantity of the enzyme protein present.
